Overview
Cauliflower (Brassica oleracea var. botrytis) is among India’s most valuable cool-season vegetables, grown from the plains to the hills. Like cabbage it is transplanted, but it is far more temperature-fussy — each variety only curds well within its own narrow temperature band.
That is why cauliflower is sold in maturity groups — early, mid and late — and why choosing the group that matches your sowing date is the first and most important decision. Get it wrong and the plant either buttons into a tiny useless curd or never curds at all.

Temperature is everything in cauliflower. A curd forms only when the plant meets the right temperature at the right size — too warm for a late variety and it never curds, too cool too early for an early one and it buttons. Sow the group your season actually suits.
